Chef-owner Mateo Granados was executive chef at Charlie Palmer’s Dry Creek Kitchen and left in 2003 to pursue pop-ups and catering that celebrated his heritage while selling handmade tamales. We were sold on this Yucatán meets Sonoma hybrid moment we saw him personally preparing to roast a whole pig on the back patio.
